  • my own hummus

    one thing I didnt like about hummus in the mid east, was the strong lemon flavor. In this one, i've created what I consider to be a nice blend, and i've added a little of my own touches which has been successful in Jordan among friends.

    hummus bi Tahini
    chick pea and sesame puree

    1/3 cup tahini
    1/2 cup lemon juice
    1/4 cup water or more as needed
    1 cup chick peas canned
    2 cloves garlic, crushed
    salt
    1 teaspoon sumak
    dash pepper
    1/4 teaspoon cumin

    Place the tahini and lemon juice in a blender, and mix gently. Add the water, then blend on low adding the chick peas until its mixed moderately. If needed, add more water, stirring as the mix becomes thick.
    Add the garlic, and continue mixing until it's thick and pasty.
    Add the salt, sumak, pepper and cumin, mix gently.
    Spoon out onto a place, and spread evenly, then serve by dribbling a little olive oil over the hummus, turning the place to make it even over all. Decorate with a little parsley leaves, and if you like, a few whole cooked chick peas in the very center. Sprinkle lightly with paprika, or more sumak if you like this spice as much as i do.
