  • Favorite Cookie Recipes

    We're giving the students at my special education school a luncheon tomorrow before our winter break. To keep costs down this year the staff has been asked to bring a course of food from home and I was "volunteered" to bring dessert. Since we'll be eating buffet style, I thought cookies would be a good choice, simple to make and easy to eat.

    That was my thought on Thursday at least, but now it is Sunday and I have to get this done by tomorrow for the kids' lunch. I'll need enough for about 120 people!

    Anyone got any easy, tasty recipes that they would like to share?

    My wife said I could raid her pantry for ingredients :embar:

    A favorite of my sons:

    Russian Tea Cakes

    Preheat oven to 400 degrees

    1 c softened butter
    1/2 c sifted powdered sugar
    1 tsp vanilla extract (or vanillin (no alcohol) or you can substitute maple syrup)
    2 1/2 c all purpose flour
    1/4 tsp salt
    3/4 c finely chopped nuts (I like pecans)
    Some extra powdered sugar


    Cream butter. Add sugar, beat till fluffy. Stir in vanilla.

    In separate bowl, mix rest of ingredients.

    Blend well.

    Chill until firm.

    Shape into 1 inch balls.

    Place 2 inches apart on ungreased cookie sheet.

    Bake at 400 degrees for 12-15 minutes, or until edges are lightly browned.

    Roll in additional powdered sugar while still warm.

    Cool.

    Roll them in sugar again.

    Makes about 4 dozen.

      1/2 cup butter, softened
      1/2 cup sugar
      1 teaspoon vanilla extract
      1 lrg. egg yolk (reserve white)
      1 cup flour

      Step1 Combine ingredients in mixer bowl until blended
      Step2 Shape into small balls and place on ungreaded cookie sheet
      Step3 Beat egg white slightly with fork. Dip fork in egg white and lightly press cookie. Sprinkle with additional sugar. Bake 8 to 10 minutes at 350F.
