Asalamu Alaykum

what happened to Food talk? I'm trying to learn how to cook! :banghead:

I know few recipes, like how to cook my tea and coffee, but I just want little more than that. u know! I think chefs have one of the luckiest jobs!

so lets exchange recipes and talk about foods, all type of foods, except pork ofcourse, and yeah no canabilism too!

what is your fav type of dishes? drinks? pastry? ect..

lol I'm getting hungry!

Abony, you got the right baker. I use to designe my own cakes and then bake and assemble them. Some were 6 tiers high.

Well i have to tell you; i am a graduate from " Wilton " cake making school.

Now, why your cakes deflate? What tipe of cakes you where making?

i only ever tried2 mke a chocolate cake once..and the result ws terrible..i never tried after tht! (this ws like...6 yrs ago...so iv totally 4got where i went wrong!)

I ended up putting 8 ounces of salt instead of sugar. :nervous:

It was hilarious to watch everyone try and eat the cakes. :D

mine that i tried 2 make...i did it in the microwave :banghead: and the butter melted so it all turned 2 liquid....and then i tried 2 resolidify it by heating it so much that it turned black and burned and couldnt separate it from the plate thingy it was on....so i had 2 chuck em both in the bin :banghead:

Halwa is indeed hard work, MashaAllah, :)

No I never had Aano geel and hilib before lol, I never had camel meat before, Have you?:) What is it like? I heard that it tastes like beaf.:D

that is very sad! u know they say your not a real Somali until u have either tasted camel milk or meat! ;)

yes I had the pleasure of drinking aano geel in the morning! ahh subhanallah - there is nothing like drinking camel milk in the morning!

about the meat - and I don't think it tastes like beef. I tell you it is very hard. u need strong teeth :D u be able to eat it!

I can only imagine the size of that meat lol, it's pretty huge I'm sure, so all It takes to get a good bite is some strong teeth? I got that:D

I don't like drinking milk, so I would pretty much not drink the camel milk,.;), would love to give the meat a try tho:)

Nice Picture Salahudin, I bet Slaughtering a camel must be alot of work, not to mention cooking it. :eek:

lol I think maybe ur grandpa or grandma could tell you about it.

yes I have also seen it being slaughtered. it takes great skill and bravery to bring it down! but when after it is tied up - it only takes sharp dagger(to'rey).

cooking it is also not too hard. it only takes little longer and large cooking pot! ;)

btw how come u don't drink milk?

Well, I don't like the taste. When I was younger my father used to make me have it every night before I went to sleep & every morning, and the only way I would have it is was with 10 spoons of sugar and close my eyes & nose. Alhamdulilah. Glad I made through those days lol.

I know that some people LOVE milk, and I find that weird.:freedom:

Borscht is pretty good, so is chicken with 40 gloves of garlic; however it is made with white wine.

But since alcohol evaporates in cooking leaving, I have heard some Muslims have no problems cooking with wine, and I have heard some Muslims who disagree with that opinion.

Chicken Cacciatore is good
As well as my homemade spaghetti sauce.
Some forms of Japanese Sushi are great, but overall, I like Chinese cooking. (side note: sushi does not mean raw fish there are many forms of sushi many of which are cooked and does not use fish).

Plus, i am a woman!

Never had camel meat or camel milk. But, if i ever would have camel milk, i bet i can make the best, tasty, cheese anyone can had.


about the meat - and I don't think it tastes like beef. I tell you it is very hard. u need strong teeth u be able to eat it!


No meat is hard anough for a chef to cook.

I would make a marinade with saline, dry wine, and pickling salt, spices and herbs. then cubed and poundet the meat, put in the marinate and leave in for several hours. And then rosted in a open firelogs, till done. (course the meat need to be basted now and then). but it will be very tender and delicious.

Wowww. Am i say that? I am a veggeterian!:D

But i would eat the camel-milk cheese i would make.

i have no particular fav recipe cause I'm the kind who likes to eat and try everything lol. Can't stay with only one type of food. I like my own Malay food, Indian curry lol, Chinese noodles, Jap sushis are divine and was an addict, seafood pasta was my favourite last weekends, but will change next weekends lol etc etc etc. like to make my own if i got the time cause of the freedom to indulge more, u dont get extra cheese and the topping if you buy pizza at the restaurant lol.

here are couple of easy recipies I've found for you online:


SOMALIAN SOUP


2 lbs. Chicken parts (preferably breasts and thighs)
3 cups hot water
1 large tomato, blanched, skinned, cubed and seeded
1 large onion, cut into wedges
1 large potato, peeled and diced
2 tsp. salt
¼ tsp. pepper
1 cup ground almonds
2 Tbs. Minced parsley
Unsweetened chocolate, shaved or chopped
Sliced almonds, toasted


Combine chicken, water, tomato, onion, potato, salt and pepper in large saucepan; cover and bring to boil. Simmer, covered, for 1 ¼ hours or until chicken is tender. Lift chicken from soup with slotted spoon; discard bones and skin. Return chicken meat to soup; add ground almonds and parsley. Simmer, uncovered, 15 minutes longer. Serve in soup bowls; garnish with chocolate and sliced almonds.




Somali spiced tea


you will need to use a kettle or enamel jug which can be put directly on the stove, as all the ingredients are cooked together in a pot on open heat.
To six cups of tea you will need:
1 pint of water
4 whole cardamoms
4 whole cloves
a stick of cinnamom
4 tsp good tea ( 3 teabags)
1 teacup fresh milk (may be omitted)
1/2 teacup sugar( may be served in a bowl later)

Somali Crabmeat Stew


Ingredients 480 ml white rice
960 ml water
60 ml peanut oil or butter
240 ml onions, finely chopped
1 tsp curry power
1 tsp powdered ginger
1 tsp salt
1 tsp crushed red pepper flakes
1 tbsp tomatoes cut in small wedges
908 g crab meat or other seafood such as scallops
optional: empty scallop shells for serving

Preparation

In a saucepan, wash and rinse the rice. Add the water, cover and bring to a boil. Reduce heat and let simmer for 15 to 20 minutes. Meanwhile, heat the oil or butter in a deep, heavy saucepan. Add the onions, curry, ginger, salt and red pepper flakes, and sauté until the onions are lightly browned. Add the tomatoes and simmer until soft. Add the crabmeat or other seafood and sauté for 10 minutes. Serve over the rice in scooped-out scallop shells or alone.

Healthy Sambusa recipe

Exact measurements are not listed so use taste, smell, and a sense of adventure to guide you.

Sambusa
These stuffed, triangular pastries are popular appetizers served at Somali weddings, parties, and during Ramadan. Sambusa are stuffed with:

Meat (spiced ground beef flavored with garlic, cumin, cilantro)
Fish (aromatic, delicious, boneless fish)
Vegetable (onions, green pepper, carrots, spinach)

Ingredients:

Flour, minced meat, onions, oil, fresh mixed vegetables, salt, black pepper, water, coriander, cumin, garlic, cilantro How to make the Sambusa dough:
Sift the flour and salt into a bowl. Add little amount of oil to the flour mixture. Rub the oil into the flour with your fingers until the mixture resembles coarse breadcrumbs. Slowly add water until the dough can be gathered into a stiff ball.

Empty the ball out on to clean work surface. Knead the dough for about 10 minutes or until it is smooth. Make a ball. Rub the ball with about 1/4 teaspoon oil and slip it into a plastic bag. Set aside for 30 minutes or longer. Then roll out the dough into a rectangle that is 1/4 inch thick. Cut out 4 inch square pieces of dough.

Stuffing:
Prepare a stuffing of your choice. Place stuffing in the center of each square. Fold the squares into triangles and seal the edges tightly.

How to fry sambusa:
Heat about 1 1/2 to 2 inches (4-5 cm) of oil for deep-frying over a medium-low flame. You may use a small, deep, frying pan for this. When the oil is medium hot, put in as many sambusa as the pan will hold in a single layer. Fry slowly, turning the sambusa frequently until they are golden brown and crisp. Drain on paper towels and serve warm.

wow salahudin I don't believe you are a bad cook from these recipes!

The one you posted above is very like the Mexican chicken mole, a dish that has to be close to what they eat in heaven.

and you are wrong about garlic, it is one of the best gifts! If you don't have much time and are out a lot I really recommend a slow cooker, between a slow cooker and a bread machine most of my meals are cooked 'remote' and the clean up is easy and it's really nice to come home from work and dinner is ready!

try this recipe:

CHICKEN W 40 CLOVES OF GARLIC

SERVE W A HEAP OF MASHED POTATOES OR TOASTED BAGUETTE TO SOAK UP THE SAUCE. aLSO GREEN BEANS W ALMOND SLIVERS OR HONEYED BUTTERED CARROTS.

2 tbsp butter

40 (count 'em) cloves of garlic (about 4 heads if you can't count)

3.5 lbs chiken pieces, skin on breasts, skin removed from legs & thighs

2 onions finely chopped

4 celery stalks diced

1 tsp of dried tarragon leaves (or thyme if u prefer)

1 tsp salt

1/2 tsp black pepper
1/4 grated nutmeg
1/2 cup dry white vermouth or white wine ... (hmm if you don't use alcohol maybe white wine vinegar mixed w chicken brith to take the edge off?)

1. In a fry pan melt butter over med low heat, add garlic and cook, stirring often until it softens n turns golden. Transfer to a slow cooker w a slotted spoon (if you don't have one a big cast iron stovetop casserole - I have used this on the original 'slow cooker' - woodfires and coal stoves etc. too).

2. Increase heat to medium. Add chicken in batches to brown. transfer to slow cooker.

3. Add onions and celery to pan & cook stirring untill softened. Add tarragon, salt, pepper, nutmeg and cook stirring, 1 minute. Add vermouth and bring top a boil.

4. Pour over chicken in slow cooker. Cover and cook on slow cooker setting high for 2.5 hrs - 3 hrs, OR on low for 5 - 6 hrs until juices run clear when chicken is pierced w fork.

YUM AND THE GARLIC MAKES THE DIFFERENCE!

Persian Spinach and Yogurt Dip (Borani Esfanaj)

Serve with crudités, pita, or crispy flatbread.

2 quarts water
1 (10-ounce) package fresh spinach, chopped
2 teaspoons butter
1/3 cup finely chopped sweet onion
1 garlic clove, minced
1/2 teaspoon salt
1 cup plain fat-free organic yogurt (such as Stonyfield Farm)
1/4 teaspoon freshly ground black pepper
1/8 teaspoon ground cinnamon

Bring 2 quarts water to a boil in a Dutch oven. Add fresh spinach, and cook for 1 minute. Drain well. Place spinach on several layers of paper towels; squeeze until barely moist.

Melt butter in a medium nonstick skillet over medium heat. Add onion and garlic; cook 6 minutes or until onion is tender, stirring occasionally. Remove from heat; stir in spinach and salt. Cool to room temperature.

Combine spinach mixture, organic yogurt, black pepper, and ground cinnamon in a medium bowl. Let stand for 30 minutes. Refrigerate until chilled.

Yield: 13 servings (serving size: about 2 tablespoons)

Hungarian Lemon Poppy Seed Cookies

Makes about 2 dozen cookies

Ingredients:

2/3cup granulated sugar
1/2cup butter, softened
1egg
2teaspoons grated lemon peel
1-1/4cups all-purpose flour
1/2teaspoon baking soda
1/4teaspoon salt
1tablespoon poppy seeds
1cup powdered sugar
2tablespoons lemon juice

Preparation:

1.Preheat oven to 350°F.

2.For cookies, beat granulated sugar and butter in large bowl of electric mixer at medium speed until creamy. Beat in egg and lemon peel. Combine flour, baking soda and salt; gradually add to butter mixture. Beat in poppy seeds on low speed.

Good information. I know a recipe too. Boil some water in a kettle and pour it in a cup. Put one tea bag in, put two spoons of sugar then add some milk. Thats what you call tea lol

Simple Moroccan Lamb w/Almonds

2 lbs of lamb
3 onions sliced thinly
2tbs of butter
olive oil to cover bottom of pan
2 tbs of ginger
1tbs of cumin
1 bunch of corriander ( tied in a cheese cloth)
salt to taste
slivered almonds ( about a fist full)

take almonds and boil in apx 1 1/2 cups of water for apx. 30 min.
DO NOT throw out the water

Put olive oil and butter in the bottom of a pan
Add onions.
Stir frequently until onions are really soft but not brown.
Add lamb and turn several times until it is golden brown.
Once this is done add your spices.
Take the water from the almonds and add it also to the pan. (The water not the almonds)
add the coriander.
simmer stiring often until the water has thickened and is like a gravy. ( Medium heat for about 30 minutes)
remove the corriander.
Serve in a large dish and sprinkle with the almonds you boiled.
Eat with flat bread.
