1 lb. fresh spinach
3-4 cloves garlic
2 TB. olive oil
1/4 tsp. crushed red pepper flakes
salt & pepper to taste
balsamic vinegar

Directions: In a large kettle, boil about 1/2 full of water. When water boils, dump spinach in. Immediately drain the spinach in a sieve or colander. Run cold water over to cool for handling. Squeeze as much liquid as you can from the spinach, and shape into a disc.

In a skillet, heat olive oil, garlic and pepper flakes. Saute until lightly brown, about 1 minute (be careful not to burn the garlic!). add the spinach disc, and break it up with a wooden spoon. Stir until nicely coated with oil and garlic. Salt and pepper to taste. Put on a serving dish. Drizzle with balsamic vinegar, and ENJOY!
