sometimes they make it sooooo spicy i swear i could spit flames out of my mouth! i went to the mosque one day when they served us all biryani that was by far the spiciest i ever had and little 2 year olds were eating it with no sense of heat!

true indeed. fortunately I've been trained in cooking alternative dishes using as leas fat as possible while keeping the taste and flavor of the original.

let start with the fat free/health Hyderabi Biryani (simple version)
follow the guy from the video link bellow of a dude making that biryani, and don't be surprise when he gets emotional:

However, follow my guidelines bellow to make the biryani in the viedo healthy:

1) one table spoon is enough per person per day or no oil at all.
2) Use fat Free yogurt
3) Do not cook with fried onions, they are way to high in calories. Use Dried onions you can find in stores instead. you can fry the dried onions with as little as 1 table spoon of oil if you insist on using fried onions.
4)trim any visible fat from meat. poultry is easier to trim while lamb/camel/goat/penguin/beef/.... is more difficult but easier to do with steam.

For an even healthier biryani, you can put more vegetable (any). In that case, mix your vegetables (Except potatoes unless precooked) into the hafl done cooked rice (50% done). the pour that mixed rice on top of the marinade

Briyani is so tasty. I dont like eating using a spoon. Since i tried with hand, spoon is long gone. It digests better. I more like chicken than vegetable as my wife is only vegetarian. She dont like chicken and im a chick mad lol

it wa a sunnat ta eat wi ur hand aswell....ummm theres evidence anall sayin dah wen u eat with ur hands, theres some sort of enzymes or sumink on the fingers and it does digest better!!..it also makes you less bloated..:rubeyes:

Exactly. Another thing is with hands you eat slowly thus digesting better like the poster above said. Normally with spoon i used to eat two plates. Now with hands i eat one plate but it does the job for two lol its so better.

hmm and that reminds me why its also sunnat to sit on the floor on a dastarkhan and eat, when you sit down on the floor, your tummys more squashed inni, therefore you eat less. Buh when you sit up on a chair, you may sit with a straight back...and it takes foreeeevveeeerrrr to get filled up then..

that link made me so hungry last nite :( its so silly cuz i ate 3 types of biryani in a week :p i should be sick of it but im not :o

so many spices... so complicated :rubeyes: i :love: mom for having patience to make that :o

the cooking of briyani takes long. marinading for 1hr at least, cooking for 30 mins in total this is at least 1h and 30 mins.:)

Can i ask have you tried it practically? Because in my view i think it does.

During Pot luck in the masjid, we weat on the floor and we usually over eat too much. So much that we even have to digest before going home or make Isha.
This even more terrible during ramadan.
I don't know if that overeating has to do with the put luck being once in a while.
But home, I eat the same quantity (1 plate) on floor or sitting

I'm trying to eat less actually..not that easy
I'll trying eating on the floor with the food being on the floor instead of on the table. your torso while sitting and food on table is Straight and that may not make a difference while sitting, maybe.

Biryani varies depending on what type of meat people have available and turkey biryani is very good. Turkey does not taste as chicken.
Turkey breast is very juicy and tender in biryani:)

In fact, ima try duck and shark meat.

I thought eating on the floor and with your hand was commonly known sunnah, especially since you're from India.

There's nothing wrong with eating from a spoon, just that is best to eat with one's hands. Mind you, there is a specific way you're supposed to do it, so it isn't messy or disgusting or anything.

As for evidence, I myself am currently too tired and lazy to go looking for some, but I know of one hadith for the sitting on the floor. Once the wife of Prophet Muhammad :saw: put the food up some place high and he got mad, saying that it should be on the ground.

Something like that. I heard it many many years ago so I can't remember it well. You can try searching for it.


Oh and as for biryani, it's really good, but there's always way too many tiny little things in it and it's annoying having to sort it out. I'd much rather just have some roti and kofta (with aloo and possibly egg) :)

This dessert would go well with that biryani.

Rasogollar Payesh
Serves 4
Cooking time (approximately): 45 minutes
~Ingredients
3 litre milk
½ cup lemon juice
½ cup sugar
1 cup cashewnuts, made into a paste
4-5 pistachios, chopped
4-5 cardamom seeds
~Method
Pour two litres milk in a saucepan and bring to a boil.
Remove from the flame, add lemon juice and stir constantly. The chhana is ready.
Now take a fine muslin cloth to drain the water from chhana. It should be completely dry. Make 20 lemon size balls with the chhana. Put them aside.
Take another saucepan and pour one litre of milk into the pan. Let it boil over a medium flame.
Add the cardamom seeds, cashewnut paste and sugar to the milk.
Let the milk boil over a medium to low flame for 30-35 minutes. The milk should thicken and turn light yellow.
Add the chhana balls very slowly and carefully so that they don't break.
Stir the milk slowly on a medium to low flame for another 10 minutes or until the balls become fluffy and smooth.
Remove the payesh from the heat and garnish with pistachios.
Refrigerate the payesh for at least two to three hours.
Serve chilled.
Grandmom's tip: Refrigerate the payesh well before serving. Never ever reheat Rasogollar Payesh as it may get spoilt.

I think malai is a hindi word, but as for kheer in urdu, I always thought kheer was rice pudding.

There is no such thing as Rasgollar Payesh. The food you are trying to describe is Rosh Malai. Payesh is an entirely different food. ;)

I found that recipe somewhere and thought I would share with you all.

After seeing your comments I feel it not worthwhile trying it because Rasmalai is available at all retail shops. Moreover Rasmalai will not go well after a good Biryani I feel.

Gujji biriyani is tops, but I haven't tasted anyones biriyani as good as my mum's lamb biriyani. I think meat biriyani is better then chicken to be honest.

As for dal chawal, it's awesome, but I don't get how some gujji's make dal chawal with chicken. That doesn't seem right. Dal chawal should always be with lamb or sheep.

I've never tried fish biriyani, but it sounds like a strange combo. I have tried prawns biriyani a couple of times, but I didn't think it was anything to write home about. Veg biriyani, no, but if it's like Akhni, then yes I have and have only recently started to like it. As for mutton biriyani with egg: you are torturing me brother; that's the BEST type of biriyani. :inlove:

u know if u see the big biopot ones in supermarket? that is the best one imo :up:
u cn use yogurt n make some kind of raita thing 2 have with it, or even jst have a spoon of the yoghurt plain out of the pot. its really nice :d altho strawb wd b ewwww in that combination!

Yeah raita sounds good and you could put mashed up Green Chillies in to make the yogurt more spicy

It does not have to include chillies.
In fact, chillies overpower some flavors and taste of biryani. It is best to serve chilly pepper/powder/sauce separately

its like a sauce, u cn put yoghurt, cucumber, mint.. there may b some other ways 2 make dif ones aswell

we got loads of food threads around here somewhere, prob few pages back altho not a thread for every food item like samosa thread etc :p

there are loads of recipe threads hanging around i am sure abt that
