spring rolls can't be that difficult, same way to make samosa just diff fillings and shape! :D

You have to shred all the veggies! Then roll 'em up, then deep fry them.

It's arduous man.

And then you like shove one in your mouth and all your hard work's gone in a matter of seconds.

yes, i agree there's work to shred the tulips and carrots and all that... most cooking need work... it's call the labour of love... :D

I do make ma own quiche sometimes but not the tartlet ones. i think the mini ones are easier coz u dont need to bake the crust first but just dump in the filling in the tart crust and bake them once.
Better he gets fat while is engaged to your cuzin so other dudettes wont be attracted to him :p

Good recipes for finger foods- my favourite topic!:D And it's my speciality!:D Ok here goes:

1- Chocolate brownies: I've tried and tested this recipe many times and can tell you it's easy. My suggestion however, is that instead of using 350g dark chocolate, use half dark chocolate and half milk chocolate instead (lots of people find dark chocolate on it's own a bit too rich). When it is cooked and cooled down, cut it into squares and shake some icing sugar on top through a sieve. Serve with either a little thick double cream or plenty of whipping cream (proper whipping cream from a supermarket fridge NOT dream topping) or a scoop of good vanilla icecream such as Sainsbury's brand (not cream of cornish!). An excellent thing to have with tea. The recipe is here:

2- Vol u vents: These are delicious puff pastry cups which you can buy frozen, ready made in the supermarket. All you have to do is bake them in the oven and fill them with either mincemeat or chopped pieces of spicy stir fried potatoes or little pieces of chicken breast which have been stir fried in olive oil and sprinkled with chinese 5 spice powder. Serve with ketchup and Tamarind sauce.:inlove:

3- Roast chicken: Marinade a big bowlful of chicken pieces such as drumsticks overnight in: olive oil, garam masala, tandoori masala, mild chilli powder, salt and a squeeze of lemon. Lay the pieces out in a roasting dish, then cook in a preheated oven set at around gas mark 7 for 20 mins, then turn the pieces over and cook on the other side for 20 mins or until the juices run clear. Serve with Ketchup, Tamarind sauce and Cucumber dip (in case they find it too spicy).

Some Asian shops sell good frozen foods which you can fry up and serve such as spring rolls and mini samosas but I would suggest that you try to cook and taste a sample of these a few days before the event (to prevent embarrassment if they don't taste good or to confirm that they're well worth serving on the day). I was also going to suggest pakoras but I assumed someone in the family should know how to make those (if not then let me know, I can paste a recipe for that too if you like inshallah).

pita roll's good alternative for spring roll... with beef or chicken fillings...

otherwise try the recipes below...

sweet sour sauce is good for the spring rolls... can get a bottle from supermarket if making it is too troublesome.


VEGETARIAN SPRING ROLLS
20 sheets spring roll wrappers
2 carrots
1 white cabbage
1 cup dry flavoured soy mince
300 g beansprouts
salt pepper
oil for frying
for dip:
soy sauce
white vinegar


Shred carrots and cabbage. Add beansprouts. Soak soy in a little bit of water untill damp. Add soy to mixture; salt and pepper to taste.
Wrap into spring roll sheets and then fry in oil. Delicious with a soy sauce and white vinegar dip.


FRIED SPRING ROLLS
1 lb. ground beef or
1 lb. ground chicken
4 oz. chopped raw shrimp
1/2 lb. cabbage, shredded
1 c. water chestnuts OR
1 c. potatoes
1/2 c. bean sprouts
1/3 c. grated carrots
1/4 c. chopped fresh mushrooms
2 tbsp. chopped green onions
2 tbsp. soy sauce
1 tsp. salt
1 tsp. sugar
1/4 tsp. black pepper
1 beaten egg
20-30 won ton wrappers
Cooking oil for frying


Shell and devein shrimp. Thinly slice or chop water chestnuts or potatoes. In a big skillet, brown beef or chicken until tender; add shrimp and vegetables. Saute for 3 minutes and stir in soy sauce, salt, sugar, and pepper; blend in beaten egg.
Cool for 15 minutes. Place 1-2 tablespoons on each won ton wrapper. Roll up and fold the edge, sealing with cold water.
Fry in hot oil to cover until golden brown. Serve with Sweet and Sour Sauce or Garlic Sauce.
Won ton wrappers are available in most supermarkets or in Oriental groceries. Yield: 20-30 Fried Spring Rolls.



SWEET AND SOUR SAUCE:

1/4 c. sugar
1 tbsp. cornstarch
1/4 tsp. black pepper
1/2 c. meat broth or water
1/4 c. white vinegar
2 tbsp. soy sauce
2 tbsp. tomato Ketchup


In a saucepan combine sugar, cornstarch, and pepper. Add broth, vinegar, soy sauce, and catsup. Stir until cornstarch dissolves. Boil over moderate heat, stirring constantly until mixture thickens.

The proportions can be adjusted according to your taste and these are just estimates. I suggest that you fry a small amount first, then taste so that you can add more spice to it if it is too mild.

Pakoras

You will need: a wok/karahi/chip pan/deep fat fryer half filled with vegetable oil

2 large white baking potatoes
1 large onion (optional)
A handful of fresh chopped coriander (optional)
3 cups gram flour (besan)
2.5 tsp mild chilli powder
2.5 tsp salt
1 tsp ground coriander seeds
1 tsp garam masala
0.5 tsp ground black pepper
0.5 tsp ajwain seeds (optional)
A little water

- In a large bowl, stir all of the spices into the gram flour.

- Peel and slice the onion, then peel and slice the potatoes into slices which are about 3mm thick.

- Stir in the onion, potatoes and fresh coriander into the gram flour until the slices are coated with the spicy flour.

- Stir in a little water at a time until there are no dry floury lumps left. If there are floury lumps left, then stir in a little more water, but if the mixture becomes too thin or watery, then add a little more gram flour. The mixture should have the consistency of creamy yogurt. Leave the mixture aside for about 10 minutes.

- Heat up the oil for roughly 2 minutes. You'll know the oil is ready when you add a drop of the mixture to it and it sizzles at the edges a bit (If the mixture sizzles too much and browns instantly, the oil is too hot, and if the mixture drops to the bottom, the oil is too cold).

- When the oil is ready, use a desert spoon to drop a few mixture coated slices at a time, until the pan is full and sizzling mildly. After about 2-3 minutes, turn the pakoras over and continue to cook them for another 2-3 minutes so that they cook on both sides. Make sure they become lightly golden brown on both sides and that is when you know that they are ready (if you're making a large amount, you may have to fry them in 2 or 3 batches).

- Use a slotted spoon or a wire net to remove the pakoras and allow them to dry on kitchen towels for a minute. If you're cooking more than one batch of pakoras, at this point, the hob should be turned down so that the oil is not too hot for the next batch.

- Serve the pakoras with ketchup, ilmi sauce and minty yogurt sauce.

Thai mango salad...

Shredded green mangoes, toasted cashew nuts, cooked shrimps (deshelled and slice half), cut red chilly, cut shallots, toss in Thai fish sauce and sprinkle coriander on top.

(Sprinkle sugar if taste is too sharp.)

Praise be to Allaah.

Among the blessings that Allaah has bestowed upon us is the fact that He has made our religion easy for us, and has not made it too difficult or unbearable. He has allowed us many things that were forbidden according to previously-revealed laws. Allaah says (interpretation of the meaning): “… Allaah intends for you ease, and He does not want to make things difficult for you…” [al-Baqarah 2:185].

Hence all kinds of food from the sea are permissible, whether they are plants or animals, alive or dead. Allaah says (interpretation of the meaning): “Lawful to you is (the pursuit of) water-game and its use for food – for the benefit of yourselves and those who travel…” [al-Maa’idah 5:96]. Ibn ‘Abbaas said: “ Sayduhu (lit. hunting, pursuit) refers to whatever is taken from it alive, and ta’aamuhu (lit. its food) means whatever is taken dead.”

There are a few things – certain types of water animals – which some scholars exclude from the permission outlined above. These are:

frogs, crocodiles, turtles..

According to the Hanbaliy and Shafi'ee scholars, all living creatures that live in the sea are halal, whether they are in the form of a fish or not. (Fiqh alal Madhaahib al-Arbaa). Based on this, oyster, oyster extract, shrimp, lobster and shark are all halal and permissible.

According to the Maliki scholars, every living creature of the sea is halal except eel. (Ibid) Hence, oyster, oyster extract, shrimp, lobster and shark are halal and permissible.

According to the Hanafi scholars, the only living creatures of the sea that are permissible are those that are in the form of a fish with an exception of the hagfish and eel. (Ibid). (these 2 even though they are not in the form of a fish they will be permissible to consume).

Hence, according to the Hanafi scholars, it will not be permissible to eat oyster, oyster extract, shrimp and lobsters. It will be permissible to consume shark as it is in the form of a fish.

And Allah Ta'ala Knows Best

well seeing as u have so many pakora and spring roll recipies thought u might like some really easy dips to make to go with them insha Allah :D ( just treble or x 5 the recipie when making in bulk)


apple and chilli dip

3 peeled and cored large cooking apples.

1 tsp chilli flakes.

1/2 tsp anise seeds

2 cinnamon sticks

1 tblsp ghee or cooking oil

1tsp grated or finely chopped ginger

2 cloves

1tsp turmeric

pinch of asofetida ( chinese name is hing)

mug of water

4 tblsp brown sugar


chop the peeled and cored apples into small chunks. Heat the ghee or oil in a pan, when its very hot, quickly drop in all the big stuff ..the ginger, cinnamon sticks, flaked chillis, anise seeds, and cloves .. shake the pan or stir till the anise seeds begin to brown, then quickly throw in the turmeric and asofetida and stir in the apple chunks too cook for about 6 minutes,mixing in all the spices, and browning the apples slightly for flavour .. then add the water and cover.. and cook till the apples are soft .. mash them up with a fork, and then add the sugar and stir and cook until the chutney thickens.. leave on a very low heat and simmer...taste to make sure there is enough sugar, add more if it tates too tart. Can be served hot or cold. delicious masha Allah :up:



spicy tomato dip

2 tins peeled plum tomatoes ( in their own juice)

half a cup of water

1 tblsp fresh ghee ( or oil )

3 tblsp chopped or grated ginger

3 small red or green chillis finely chopped

4 bay leaves

1 cinnamon stick

1/2 tsp cumin seeds

pinch of asofetida

1/2 tsp salt

3 tbsp brown sugar

heat the ghee/oil in a pan, and quickly fry the ginger, bay leaves, cinnamon,chopped chillis, and cumin seeds till cumin turns brown... then throw in all the tinned tomatoes and juice add the asofetida and salt (but if tomatoes are already salted u wont need extra) add the water, and stir and cook on a low heat for 20 minutes,or until the liquid has thickened

add the sugar and raise the heat, then stir for about 5-7 minutes until the consistancy is thick, take out the bay leaves and cinnamon stick transfer to a bowl serve warm or cold.

According to the Hanafi scholars, the only living creatures of the sea that are permissible are those that are in the form of a fish with an exception of the hagfish and eel. (Ibid). (these 2 even though they are not in the form of a fish they will be permissible to consume).

Hence, according to the Hanafi scholars, it will not be permissible to eat oyster, oyster extract, shrimp and lobsters. It will be permissible to consume shark as it is in the form of a fish.

have you tried japanese soy sauce that has sesame in it...? it's quite good for salad... :)

no havent seen that before it sounds nice, i`ll give it a try insha Allah do u put anything with it or just sprinkle it over ?

i usually just put a little salt, fresh ground black pepper, few squeezes of lemon juice, some olive oil and chopped parsley through salad.

ya... just use it like a salad dressing... i introduced it to a gf she kept saying she liked it so much she even licked her plate...:rubeyes:

I found using japanese cumcumber mixed with other greens gives it a more refreshing oriental flavour... :D
