As-Salaam Alakium,

I thought I would start a thread where we can all share recipes! Since we all are from all corners of the world.

Here is a website with TONS of recipes from an Islamic Site. There are too many to post individually. InshAllah, I will type out some of my personal recipes.

If anyone can teach me how to make grilled meat dishes, like Turkish kebabs, then i'll be really appreciative.

Turkish Lamb, Fig, and Mint Kebabs
Recipe #130400
From Cooking Light. Serving size: 2 kebabs. Per serving: 441 calories, 11.3 g fat, 35 g protein, 53.4 g carb, 10.1 g fiber, 101 mg cholesterol.


2 lbs lean boneless leg of lamb
3 tablespoons chopped fresh mint (or 1 tablespoon dried mint)
2 teaspoons olive oil
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon paprika
1/4 teaspoon pepper
3 garlic cloves, minced
1 cup boiling water
24 dried figs
2 red onions

* Lamb/Sheep Main Dish

* Low Sodium Main Dish

1. Trim all visible fat from lamb; cut lamb into 48 (1-inch pieces; set aside.
2. Combine the mint and the next 8 ingredients in a large zip-lock heavy-duty plastic bag; shake around to combine.
3. Add in lamb; seal bag; shake to coat and marinate in refrigerator for 20 minutes, turning the bag occasionally.
4. Remove lamb from bag and discard marinade.
5. In a large bowl, combine the boiling water and figs; cover and let stand 10 minutes or until soft.
6. Drain figs well; cut in half.
7. Cut each onion into 6 wedges; cut each wedge in half crosswise (should have 24 pieces).
8. Thread 4 lamb pieces, 2 figs, and 2 onions alternately onto each of 12 (10-inch) skewers.
9. Place kebabs on a grill rack (over direct heat)or broiler pan that has been sprayed with cooking spray.
10. Grill or broil 4 minutes on each side or until desired degree of doneness.

Iggy getting close for corned beef and hash time isn't it? I have irish blood in me too. I don't celebrate st. pattys day but I do cook my corned beef and cabbage and potatoes around that time every year just like my turkey on thanksgiving. :D

Falafel burger with hummus
Preparation time 30 mins to 1 hour

Cooking time 30 mins to 1 hour


Ingredients
For the burgers
250g/9oz chickpeas, soaked overnight
1 medium onion, very finely chopped
2 cloves garlic, crushed or finely chopped
2 tsp ground cumin
2 tsp ground coriander seed
6 tbsp chopped parsley
½ tsp chilli powder
2 rounded tbsp plain flour
1 tsp salt
Oil for deep fat frying
For the hummus and tahini sauce
125g/4½oz hummus
2 tbsp extra virgin olive oil
1-2 tbsp lemon juice
1 tbsp tahini
4 large rolls (or hamburger buns)
1 fat tomato, sliced
1 red onion sliced
4 leaves butter lettuce
To accompany
salad or fries, or sautéed potatoes



Method
1. Drain the chickpeas thoroughly and pulse in the food processor until lightly broken up.
2. Add the remaining ingredients and continue to pulse until you have the texture of coarse breadcrumbs. Gently form into patties approx. 10cm/4in in diameter by 2½cm/1in. thick.
3. Fry in hot oil at 180C/350F for 4-5 minutes, or until crisp or golden.
4. For the hummus and tahini sauce simply whisk together all the ingredients. If you prefer a lighter sauce add a little water until it is the preferred consistency.
5. To serve, split and warm the rolls. Place in the top of each roll a leaf of lettuce, a slice of tomato, and some red onions.
6. Place the falafel burger on the bottom side of the roll, and some of the sauce.
7. Either serve side by side on a plate, or built up as a burger on a plate with your choice of accompaniment.
8. Cook and refrigerate or freeze any left over burgers for a quick and easy snack
