For one thing kuree kitchri is vegetarian.

Daal and rice can be made with chicken/meat and more usually than not it it!

Erm, Kuree kitchri is all yellow.

Dhal and rice is white rice with brownish/reddish dhal! :smack:

The point is if daal is made without meat and served with rice then kuree kitchri and daal & rice looks pretty much the same (colour doesn't matter much) and to a point taste the same

Kuree is made with yorghurt Dhal is made with well err dhaal!

It's like saying rice n chicken/meat curry is the same as kitchri kuree.

Anyhoo, if you wanna cook RINGROO don't cook it the Gujji way because you end up with mashed up RINGROOS and all it will taste of is curry-fied masala.

GUJIAIngredients :
500 gms maida (flour)
1kg khoya
3tbsps kismis (raisins)
200 gms almonds (cut into thin strips)
6 tbsps cooking oil. ( keep some more aside for deep frying)
200 ml water.
500 gms sugar.

Method
Mix six tablespoons of oil with maida. Using fingers, mix well so that the mixture takes the form of breadcrumbs and binds to a certain extent. Now add some water and knead lightly. Keep adding water as required and knead into a soft dough. Set aside and cover with a damp cloth.
Put the khoya in a deep-frying pan and fry to a light brown colour. Add sugar into the khoya and mix well. Add almonds and kismis. Fry for a few minutes and remove from the fire. Let it cool.

Roll out the kneaded dough into a chapati, thicker and smaller than a normal chapati. Fill half the chapati with the khoya mixture, fold the chapati and seal the round, twisting the edges inwards. Take care that the filling does not ooze out.

Deep fry these gujjias, a few at a time, till they are a deep golden brown. Fry on a slow fire. When done, take them out with a sieve type ladle, draining the oil completely. Let them drain further on a spread out newspaper, till all the grease is soaked up.
Store in an airtight glass jar.

and enjoy eating :)

Before, you start cooking Indian food, you need to have these in your fridge:

Garlic/Ginger paste: you get an equal number of both ginger and garlic, maybe two or three should be enough for starters. Separate the cloves and soak overnight. Then, peel, chop and blend so it becomes similar to pulp. Store in an airtight container.

Green Chilli Paste: Chop up about 9-10 green chillies and blend so it too becomes pulp-like.

Garlic Paste: Get about 3-4 garlic and soak overnight, peel-chop and blend in the morning, store in another container.

Most Indian dishes have the same basic masala which is made then the actual meat or veg is added.

The Masala recipe is this:

Ingredients:

1 Onion
Oil
Cumin seeds- 2 tbsp
Garlic/ginger paste-2 tsp
Green chilli paste: 1-2 tsp
Garlic Paste- 1 tsp
Coriander-finely chopped- 2-3 sprigs
Bay leaves-2
Cinnammon stick- 7-8 cm long, broken
Turmeric powder- Quarter tsp
Paprika – half tsp
Salt – 1 and a half tsp
Tomato pulp tin (can be chopped or plum, doesn’t matter) – blended
Red Chilli Powder – 1 tsp
Methi baaji- a handful (I think this is fenugreek, im not too sure )

Instructions:

Open windows and make sure you’re in your not so good clothes, cuz it has a strong aroma
Shred the onions in to a pot, add oil until the onions are soaked, but not drowning in oil. Place on a high heat and add the cumin seeds, keep stirring so that the onions do not overbrown. When they are golden, add the bay leaves and cinnamon stick, carry on stirring. Stir for about 4-5 mins, if it looks as if the onions are browning too much then switch off the heat.
Add the garlic/ginger paste, and the ginger paste as well as the green chilli paste. Then add the methi baaji, cook on a medium heat, and add the tomato. Keep on the medium heat and then add the red chilli powder, the salt, paprika and turmeric. Finally, add the chopped coriander, and let it simmer, do not cover with the lid. If it starts bubbling loads, then turn down the heat.

This is the basic masala, you can store it in the fridge/freezer for when you need it.

If you want to make a chicken dinner, then you soak the chicken and chop it up, separating into the leg bone, thigh, neck etc. Then simply add to the masala and allow to cook, until the chicken is done. You may add a few sprigs of coriander to garnish.

If you want to cook lentils, then soak the lentils and add to the masala, and allow to cook.

Asalamualakum what you guys mean is daar gos piliou, how about mug ne daar is very nice, very easy to make, apparently we gujis are known for our daar gosh pilau, i think we gujis are very good at cooking we have an art, we like to explore:hidban: wasalam
