Herb Dressing


Common to all Middle East countries
1 gill yoghurt
1 tablespoon parsley, finely chopped
1 tablespoon lemon juice
1 tablespoon grated horseradish
1/2 teaspoon salt
6 celery leaves, finely chopped
1/2 tablespoon chives, chopped
1 tablespoon orange juice
1 tablespoon paprika pepper
1 tablespoon mint, finely chopped

Beat yoghurt a few times and add lemon and orange juice. Stir well, then add all other ingredients. Whisk for 5 minutes before serving.
